Haddock Fish Cakes

Serves 4

Ingredients

  • 450 g (1 lb) cooked smoked haddock
  • 450g (1 lb) mashed potatoes
  • 1 hard boiled egg, finely chopped
  • 25 g (1 oz) melted butter
  • 2 teaspoons anchovy essence or Thai fish sauce (nam pla)
  • 2 tablespoons chopped fresh coriander
  • 1 teaspoon salt
  • 10 turns of a black pepper mill

Coating:

  • 50 g (2 oz) seasoned flour
  • 1 egg, beaten
  • 150 g (5 oz) fresh white breadcrumbs

Method

  1. Break the cooked fish into small pieces removing all the skin and bones.
  2. Mix the mashed potatoes with the chopped boiled egg and melted butter, then fold in the anchovy essence,Thai sauce or salt and pepper and coriander
  3. Mould the mixture into fish cakes using your hands and a palette knife.
  4. Coat each cake with flour, then beaten egg, then breadcrumbs
  5. Shallow or deep-fry as you prefer.
  6. Serve hot with a green vegetable or a salad
