Beetroot & Onion Chutney

Ingredients
- 3lbs fresh beetroot , rinsed and finely chopped
- 2lbs onions, peeled and roughly chopped
- 1½lbs cooking apples, peeled and roughly chopped
- ½lb Demerara sugar
- ½ teaspoon ground ginger
- 1 pint Malt vinegar
- 1 tablespoon of salt
Method
- Mix all the ingredients together and cook in a large saucepan for 40-45 minutes.
- Put into jars (prepared as for jam); should yield 7-8lbs of chutney, and keeps well
